Dorm Dash: Protein muffins
Lately, I have been busier than usual and wanted to come up with a grab-and-go breakfast I could take with me on days that I’m rushing or don’t feel like cooking in the morning, thus the protein muffin was born. One of my friends frequently makes protein muffins and I wanted to put my own twist on them. These muffins are moist and delicious. They’re filled with everything you need to get your day started – protein, carbs, and healthy fats. Two or three mini muffins satiate me and keep me going through the morning. This recipe is completely customizable. Like chocolate chips in your muffins? Add them! Fresh fruit? Throw it in the batter! Feel free to make this recipe your own.
Ingredients:
1 box muffin mix (I use Simple Mills because it comes in a variety of flavors and has minimal, simple ingredients)
6 scoops of your favorite protein powder (I use Vital Proteins Collagen Peptides)
1 cup of water
3 eggs
2 tablespoons avocado or coconut oil
2 teaspoons vanilla extract
1 tablespoon pie spice
Directions:
Preheat the oven to 350 degrees Fahrenheit.
In a large bowl, mix all wet ingredients.
Pour your protein powder in the bowl and slowly whisk in your muffin mix. You can use an automatic mixer, but I just use a regular whisk. The ingredients need to be well combined without lumps.
Spoon your muffin batter into a muffin tin that holds 12 muffins.
Bake for 25-30 minutes. When you can stick a toothpick into the center of a muffin and have it come out clean, they are done.
Store in an airtight container to grab for breakfast throughout the week.
